Weekly Menu Ideas: 10-02

I love variety. I love the challenge of creating new meals, discovering fresh flavors, and experimenting with different cuisines. The world is full of possibilities, each meal for me is a representation of my best self.


After living on the limited meals that I knew how to make, plus the selected variety of take-outs available, I quickly grew tired of the same old menu. To keep myself entertained, I played around with different ideas as they appeared on my Pinterest board. It adds a renewed sparkle to my life that is just the right amount of daring and normal to keep me going.


I live to eat, and so you can imagine that I hate to eat the same meal too often it feels like too much, but I also feel that the pressure to change up my meals comes from the evolution of food in general. I recall growing up and having selected staples all the time and I never had a problem with this. As I became an adult, I cannot exactly pinpoint the moment where I became a food snob.


It’s a topic that has sparked countless debates in our household, one that always seems to resurface like an old, annoying song you can’t get out of your head. My husband and I have many differences but one of the biggest being if he enjoys a meal, he would like it to be repeated very soon after the fact, while for me we should at least wait for a month before attempting it again.


While it is amazing to try new ideas and try fresh tastes, but I can imagine that for those who do not watch cooking videos all day a new menu each week can be a bit daunting. This week I tried to add a few more simple and easy to make recipes that are easily adaptable. I hope you all enjoy.

Weekly Menu - 10 February

Monday

School Lunch: Mini Pizza

Dinner: Dahl, Rice and Aloo Fry with Masala Chicken


Tips for this idea:

Lentils are a great source of nutrients and filled with antioxidants. This meal is quite easy to make and great for vegans and vegetarians. The lentils are prepared similar to a curry for me, with added spices it tastes amazing.

Aloo fry is basically potato strips fried in oil with added spices.


Tuesday:

School Lunch: Hot Dogs

Dinner: Spud Potatoes, filled with baked beans and cheese with a side of grilled sausages


Tips for this idea:

For the spud potatoes, it is best to find the biggest possible potatoes and this will be great. Baking them and then adding baked beans and topping them with cheese is absolutely delicious. For those like myself who do not like beans in any form, you can always add cream cheese or a mushroom sauce can be added.


Wednesday:

School Lunch: Pancakes

Dinner: Lasagne


Tips for this idea:

For the Lasagne , as a vegeterian or vegan option you can always add baked chickpeas in pasta sauces rather than the tradiitional mince/ ground beef. I figured that the secret to great lasagne is adding an extra layer of white sauce.


Thursday:

School Lunch: Cheese Quessidilas

Dinner: Grilled Chicken, Mash Potatoes and Vegetables/Salad


Tips for this idea:

This is the perfect lazy meal, especially for those who have an airfryer. If you intend on eating a bit healthier you can always substitute the mash potato for sweet potato or just cut out the carbs completely.


Friday:

School Lunch: Chicken Nuggets

Dinner: Mac and Cheese


Tips for this idea:

I absolutely love mac and cheese, and make it without using boxed ingredients. It is such an easy meal and can usually feed a crowd. I will post a recipe for 20 minute Mac and cheese during the week.


Saturday:

Lunch: Loaded Fries

Dinner: Burritos


Tips for this idea:

Saturdays are good for lazy days, it is easy to get creative with loaded fries. While I typically enjoy a cheesy cream sauce with added chicken, there are many different ideas that can be adapted to suit your dietary requirements.


Sunday:

Lunch: Ghananian Chickpeas


Tips for this idea:

I have seen a YouTube video about a food tour in Ghana; this meal looked delicious. For those brave enough to try, this is a great vegan meal, and since I initially saw it, there are a significant number of videos on how to make it.
